These are beautiful! Would you name them, please?
All these breads were made out of the same dough. We call it simply “Levain”. While I can’t tell you the exact formula I will say that it contains a mixture of white flour, whole wheat flour and pumpernickel flour. It is naturally leavened and gets a nice long fermentation.
Beautiful! What is that top bread? Do they sell it?
